A couple of years ago, @faineg.bsky.social and I drove around the Gaspe peninsula. In Percé, at Pub Aire Salin , I discovered Brette & Sauvage, but was unable to get to the brasserie to buy any of their incredible beer before we had to head home. Yesterday, one our way back to Boston from Montreal, I found some in a little grocery store in L’Ange-Gardien. Tonight I grilled some steelhead trout with butter and za’atar nordique from Epices de Cru, and served it with this incredible sourdough bread (fermented in cider and baked with flax seeds, pumpkin seeds, oats, and I think currants) from Boulangerie Mamiche in Frelighsburg, QC and a compound butter made with poivre des dunes and Aleppo pepper
